Bircher Muesli

Bircher Muesli - Serves 4-6

This is one of our fave make ahead breakfasts! We make it on a Sunday and it get’s us through the whole week!

Ingredients

  • 3 pink lady apples, unpeeled, quartered, core removed

  • 2 cup rolled oats

  • 1.5 cup of milk (of your choice)

  • Large pinch of cinnamon

  • 1/2 cup flaked almonds

  • 1/2 cup raisins, cranberries, craisins etc

  • 4 tbsp pepitas (pumpkin seeds)

  • 2 tbsp chia seeds

  • 1 punnet of blueberries

Method

Coarsely grate the apple. I put all the apple straight in the blender or food processor to make it quicker. In a large container that you can store this in the fridge in, mix rolled oats, all nuts and seeds and cinnamon in a bowl until well combined. Cover with the milk and then stir the grated apple and blueberries through.

Cover and place in the fridge overnight. When serving, add a little milk if it looks dry or some greek yoghurt is lovely too. Top with blueberries, strawberries, kiwi fruit - whatever fruit you love.

Tips:

Adapt this recipe to suit your tastes or whatever you have lurking in the pantry. Add some toasted shredded coconut, diced dried apricots, sesame seeds!
